  • One and a quarter cup counts of warm whole-milk (careful, not to make it hot)
  • Two estimated teaspoons of actively dry or instant yeast (made use of the active yeast instead)
  • A quarter measuring cup of sugar, split into two (25 grams each)
  • Four cup counts of all-purpose flour (560 grams)
  • One and a half teaspoons of measured salt
  • Three estimated tablespoons of liquefied and unsalted butter (42 grams)
  • A single egg.

For the apples for sweet Caramel apple monkey bread:

  • A single estimated tablespoon of unsalted butter (14 grams)
  • A single medium-sized peeled and diced sweet-tart apple (about a one and a half cups)
  • A quarter teaspoon of measured ground cinnamon
  • A pinch of kosher salt
  • A half teaspoon of vanilla extract.

For the caramel sauce:

  • A single cup count of sugar (200 grams)
  • A half cup count plus two extra tablespoons of split apple cider (59mL for each half)
  • Two tablespoons of measured unsalted butter (28g)
  • A half teaspoon of measured salt
  • Two tablespoons of measured heavy cream.

To assemble:

  • Half cup of estimated unsalted butter (56 grams)
  • A single estimated cup of sugar (200 grams)
  • One and a half teaspoons of measured ground cinnamon.

Special equipment:

  • Bundt pan.


Step 1 for Caramel apple monkey bread

Preparing the dough for sweet Caramel apple monkey bread:

  • Beat two spoons of actively dry yeast and a split quarter cup of sugar into a mixture of whisked egg and one and a quarter cups of warm whole milk. Whisk till foamy, preferably with an electric mixer. Then keep aside.
  • While in a second mixing bowl, and using an attached dough-hook electric mixer, rumble up the remaining split quarter cup of sugar, four cups of all-purpose flour, one and a half teaspoons of measured salt, and three tablespoons of liquefied unsalted butter.
  • Gently pour in the wet ingredients of a yeast combination to the dry ingredients.
  • Knead the batter at medium speed for five to ten minutes. Stop at intervals to scrape down the inner-sides of the mixing bowl.  At this point, you should produce a soft, smooth paste that springs back when poked (almost like a rubber).

Note: You could improvise using your hands to knead the dough on a floured board if you do not have an electric mixer with an attached dough hook. An active dry yeast can be proof by adding a half cup of warm water before adding in a whole-milk containing melted butter. Of course, this should be before the egg is added. When this is done, you may combine your wet ingredient with the dry ingredients (flour, sugar, and salt).

Letting the dough an opportunity to rise:

  • Lightly grease a bowl.
  • Using your hands, roll your dough into a ball and place it in the already greased bowl.
  • Cover adequately with a plastic wrap, and set in a specifically warm area of the kitchen to increase or size double within an hour.

Note: Placing the paste in a refrigerator overnight to increase does not necessarily mean that the batter will double, but expect it to increase. For a better-risen result, avoid a cold area because dough thrives better in a warmer location.

  • Turn off the heat and allow the apples to cool off from the heat.

Note: The apple preparation can be made ahead and refrigerated till needed. Rather than making an apple pie filling from scratch, you may purchase from the store.

Preparing the caramel sauce:

  • You need a saucepan to combine and heat a split measure of apple cider and a single cup of sugar.
  • Heat first at low heat till the sugar dissolve finely into the brew. Then, increase the heat to a medium-low, bring to boil without stirring until you have a perfect deep golden color of caramel.
  • Remove the brew from heat when ready and stir in the two tablespoons of unsalted butter to melt, then add up the remaining split measure of apple cider, a half teaspoon of salt, and two tablespoons of heavy cream. Keep whisking the combination together until completely smooth.

Note: The caramel sauce can be preserved in the cooling box for several days. When needed for use, microwave succinctly or employ a stove’s service till the concoction steadily sizzles a while before introducing into your baking.

Step 5 for Caramel apple monkey bread

Putting together the monkey bread:

  • Use a non-stick spray on the Bundt pan for greasing. Keep aside while you continue preparations.
  • Dissolve the half cup of unsalted butter in a bowl and keep aside till needed.
  • While in another bowl of a shallow depth, throw in the single measured cup of sugar with one and a half teaspoons of ground cinnamon.
  • Take up the increased batter and roll on a floured board.
  • Divide into bits of golf ball sizes and roll each portion between your hands to form a ball.
  • Taking each ball of cut out paste, first deep each singularly into the melted-unsalted butter and next, roll in the sugared-cinnamon concoction. Continue with cutting up the paste until one-third of the batter is exhausted.
  • Place each ball on the already greased baking pan.
  • Spoon half the apple filling on each laid out paste ball.
  • Divide the caramel sauce into three parts. Spread the first one-third over the top of the apple filling.
  • Top each apple filling with another layer of the dough ball.
  • Spoon the remaining apple filling over the second layer of dough balls.
  • Spread the second one-third of the caramel over the apple filling and save the rest for the serving.
  • Top with the last batch of dough balls.
  • Cover the batter with a plastic wrap, to rise between thirty and sixty minutes in a warm place. Allow the batter to increase till the top is moderately puffed out.

Note: While a room temperature batter will take about thirty minutes to hike up, a refrigerated paste will take about forty-five to sixty minutes to increase.

Step 6 for Caramel apple monkey bread

Preparing to bake monkey bread:

  • Preheat the baking-oven to 350F.
  • After the dough’s risen progress, uncover the plastic bag, and place in the preheated oven.
  • Bake the monkey bread for twenty-five to thirty minutes until golden brown and well risen at the top, over the baking-pan.

Note: You can check with a toothpick to be sure it’s ready. Deep in the toothpick into the bread and, when brought out, should look clean.

Cooling and serving:

  • Take out the monkey bread from the baking-oven and set to cool on a wire rack for fifteen minutes while still in the Bundt cake pan.
  • To remove from the Bundt pan, place a serving dish over the monkey bread and flip over to remould into the serving dish. Use an oven mitten to protect your hands.
  • Do not forget the remaining hot caramel. Time to put it to fair use; nicely trickle it over the monkey bread. Be careful; the bread is still hot.
  • Serve immediately.

Must I proof my yeast before baking Caramel apple monkey bread?

Proofing your yeast is one of the steps used when baking a yeast bread and other baking processes that require you to allow the dough rest to rise before it goes into the oven. Although the yeast package advises that you prove your yeast, it is unnecessary to dissolve yeast in warm water before using it. Proving the yeast is a way to test if the yeast is alive and active.

What do I do if I don’t want a homemade dough from scratch for Caramel apple monkey bread?

You can substitute with some refrigerated batter. I prefer the homemade batter, but biscuit dough is still acceptable. Break the biscuit dough up into pieces. Biscuit dough of three cans should be able to do the trick.

How about using a canned apple pie filling instead for baking Caramel apple monkey bread?

Canned apple pie fillings can rightly substitute a homemade apple pie filling. A can and a half should be a good measure for your monkey bread baking.
